Warm Vinaigrette Potato Salad

20 - 25 baby potatoes (mini or French potatoes)
Balsamic Vinegar - to taste
Olive Oil - to taste
Salt
Pepper
2 cloves Garlic
2 Medium Onions
1 Red Bell Pepper
Caraway Seeds - optional
Cilantro - fresh

Bring a large pot of water to a boil, add salt and garlic cloves. Cut potatoes in half and boil - do not skin. 

Dice onion, cilantro and pepper - set aside in a large bowl. Combine other ingredients to make a vinaigrette - you can also add garlic powder, season salt, dried parsley, and other favorite herbs. 

Drain boiled potatoes and rinse under cool water - do not overcook the potatoes. 

Put them in the bowl and mix gently - add vinaigrette and set aside for 10 minutes. Mix gently before serving - served warm.
